~Chocolate Chip Banana Bread~
Featured in "Orangette", Molly Wizenberg's food blog, in the 12.20.2004 installment, entitled, "Mussels, wine, and an excuse to eat whipped cream"
VEGAN OPTION
Replace 1 egg w/1.5 tsp Ener-G Egg Replacer and 2 Tbsp warm water
Replace 1/2 c butter w/1/2 c non-hydrogenated margerine
Also, replace processed sugar with raw sugar
1 C sugar
1 egg
½ C butter
2 mashed ripe bananas
3 tablespoons milk/soy milk
2 C flour
1 tsp baking powder
½ tsp baking soda
1 C chocolate chips
½ C chopped pecans or walnuts
1. Preheat oven to 350 degrees F.
2. Cream sugar, egg & butter in a large mixing bowl.
3. In a separate bowl, mash bananas; mix with milk.
4. In another separate bowl, sift flour, baking powder and baking soda.
5. Stir dry ingredients, by hand, into reserved creamed mixture alternately with reserved banana mixture until flour is just moistened.
6. Stir in chocolate chips and nuts.
7. Turn batter into a 9x5x3 inch loaf pan and bake for 1 hour, or until toothpick inserted in center comes out clean.
8. Remove from pan and cool on a wire rack.
