Cut an onion top to bottom into thin slivers and fry in hot oil for 2-3 minutes, then add minced (ground) pork, some chopped ginger
and garlic and continue frying until browned. Add courgettes cut into half-moons, together with a Tbs or two of hoisin sauce.
Dissolve a tsp cornflour in a half cup of water and stir this into the pork. Simmer for 5 minutes, stirring as the sauce thickens
and becomes smooth. Serve with boiled rice.
