The pourriture Noble, or nobe rot.
This is where the fruit is
attacked by a fungus that dehydrates
the fruits and converts any acids into
sugars and often additional flavours
that vary from melon to peaches and
vanilla. This is a prized trait in
desert wines such as the Monbazillac and
the Sauternes.
