I like cooking. Nothing relax me more than cooking. When I am overstressed I need to concentrate me in something different and I feel cooking helps me out of troubles. I concentrate on the recipe and in any single operation.
Today it wasn't really so and just for my pleasure I did a personal recipe, based on pasta. I stir fried some eggplant with oil and garlic, added some tomatoes and than mixed this sauce together with mozzarella and ricotta.
Conchiglioni is a special pasta shape, like big shells, which is really good to stuff with a good filling. Of course you don't need to overcook them, in fact I stuffed them with the eggplant's filling I made and finished cooking in the oven topped with parmesan cheese.
It has been a nice sunday's lunch. My guest enjoyed it a lot...
