"Norma" is a well-known opera by sicilian composer Vincenzo Bellini
But it is also a sicilian pasta recipe and it seems the name was given by the sicilian playwright Nino Martoglio.
"It's a Norma!", underlining the recipe was a masterpiece.
And it actually is.
A masterpiece of semplicity.
One of my favourite.
The original recipe are maccheroni (rigatoni) topped with tomato sauce and added by stir fried eggplants, finished with grated ricotta salata cheese.
Me I like to lighten it by using grilled eggplants instead of stir fried, adding some of them (minced) to the sauce.
With a glass of prosecco is an excellent light and tasty dinner
