I have this theory (if you could call it that) that things should be used and if that means getting them messy, chipped, dented or worse than that’s what needs to happen. I hate the thing of “oh well it was expensive so I have to treat it with huge reverence or handle it with kid gloves”. I expect you can see that when you look at my fabulous Kitchen Aid mixer liberally sprayed in flour and other stuff of a sticky nature. The beast has been in action today making pizza dough and pasta dough. I have a feeling there may be more pasta dough imminent because there are zillions of nettles in the field and the young shoots make great pasta Verdi, when cooked and combined with the other ingredients of good pasta (semolina, grade 00 flour and eggs).
