Friends contribute all sorts of positive factors into one's life. Dov manages, without fail, to bring his good nature and generosity "to the table" each and every time our paths cross. Dov has also inflicted me with the brew-your-own-espresso-at-home bug. Unfortunately, I'm still refining my technique which I'm sure still leaves much to be desired. I have learned that one of the benefits of making your own espresso is that you can enjoy it as God had intended it to be...within moments of espresso production. You see, there is the caramelized coffee sugars and proteins (crema) that form when espresso is brewed optimally. It contributes much to the taste but is quickly lost if the espresso is left standing for too long. I took so long to get this photo that the crema in Dov's espresso went to crema-heaven before he got a chance to enjoy it. So, thank you, Dov, for being patient while I shot this portrait, and sorry for the sub-optimal espresso.
Please add "patience" and "understanding" to the list of Dov attributes as well!
