Mix the juice of a lemon with 2 Tbs olive oil and 2 Tbs melted butter, dip fillets of cod into the lemon juice mixture,
then dip into seasoned flour, shaking off any excess, and fry in hot olive oil for a couple of minutes on each side,
until just browned. Tip the rest of the lemon juice mixture into the pan together with 2 – 3 crushed garlic cloves,
basting the fish, and place the pan in a 200°C oven for 10 minutes, until the fish is fully cooked.
Serve, garnished with chopped parsley and lemon slices alongside rice and a simple mixed salad.
