We were lucky enough to visit New Orleans during "mudbug" season, and were able to partake in many of these "boils". The resort staff boiled a cauldron of spicy broth made with onions and garlic, then added crawfish (in 30 pound sacks), potatoes, turkey necks, sausage and corn.
