My delicious version of common Fish & Chips!

You need very few ingredients, but it’s fundamental they are of excellent quality and quite fresh!
So choose carefully your
Shrimps
Fresh garlic
Olive oil
Potatoes
Chili peppers
Tomato natural sauce.
And, of course, a little of salt and a little of dry white wine.
I learnt how to make the perfect potatoes chips in Belgium, which is in my opinion the homeland of perfect fried potatoes.
Cut them properly, not too thin and put them into some fresh water, but then dry them well with a towel before frying them.
I use olive oil to fry the potatoes.
The secret is to fry them at least twice, you have to fry them with not too extreme temperature
the first time, than you let the oil drip off them
and then before serving fry them again in quite boiling and very hot oil for 45 sec.... Or even less.
They become crispy outside and nicely soft inside...add salt only at the end!
The shrimps must be cleaned, I like keeping the bottom of their tail and boiled, not over boiled...I said “Boiled”
