Some women invited me to take pictures of (and taste) the flatbread they were preparing for winter. They explained that each day they would make the bread for another family, and in just one day they would bake enough to last them through months of winter. The dough was prepared in a sunny little courtyard, across the narrow street three women were busy flattening the lumps of dough and putting them into an oven, where they became bread in minutes.

flatbread is named as "yufka" They can not be preserved as fresh after a few weeks.
before you eat yufka (flat bread)you water it a little and put it under some cloth so they will be soft again and again. That is too tasty.
