Well, this needs some more work. There is a dark streak down the
middle of the bottle. A proficient product photographer would have
the lighter bands on the left and right have "gradients" that transition
gradually from light to darker in the middle. I don't have the scrims
that the pros use, but surely there must be some way I can do this.

Looks good to me. I think it might actually look better with the stripes.
You can probably get rid of them by using Lightbox and lighting from the outside from two sides.

Then add a little apple juice to some water, re-full the bottle and you are back in business. V
