I know it's a squash...

But I don't know what kind, nor how to prepare it. I thought
it was an acorn squash, but when I got it home, and looked up
acorn squash on the internet, they didn't look like this one.
So what is it?

And who has a recipe for me? I know I can count on my pbase
friends to help me identify and prepare this wonderful vegetable!

I'd have it as soup, or roasted. Unpeeled, chop into even sized chunks, spray with olive oil. Sprinkle over Tuscan style herbs eg oregano, thyme, garlic, roast in a hot oven with other vegies such as sweet and ordinary potatos, parsnips etc.

Laine gave you some great recipes for this butternut squash. It is a delicious vegetable. Laine's recipes were healthy-here we'd cook it with butter, brown sugar and cinammon.

Chris has it, though we call it butternut pumpkin !...( a rose by any other name is still a rose) Peel or not, steam cook, add butter & freshly ground pepper on the plate, soup as Chris suggests, with garlic as Kim says...or, peel, slice thinly, layer in a lightly spray oiled casserole dish, add half a cup of orange juice, a few nobs of butter, sprinkle with nutmeg, cover & oven cook until tender, select a green vegetable to eat with it.......sweet potato is also delicious done this way !!

Looks like a butternut squash. Makes an excellent soup. Lots of good recipes on the internet. I like a little red pepper to balance out the sweetness.
