Season pork chops on both sides with sea salt and freshly-ground black pepper and grill (broil) on both sides
for about 10 - 12 minutes, until just cooked. Spread a good spoonful of homemade apple sauce on each chop, then cover
with slices of Stilton cheese. (Try not to use bought apple sauce, it's far too sweet!) Put back under the grill
for 2 – 3 minutes until the cheese is melted and browning. Serve with buttered new potatoes and green beans.
To make apple sauce – peel and cut Bramley apples into small chunks, put into a glass bowl with a splash of water
and cook in a microwave oven on high for 2 minutes, stir, then cook for another 2 minutes, by which time the apples
should be reduced to a chunky pulp. You could add a spoonful of sugar if the apples are very tart (although I prefer
them tart myself!) You can also cook gently in a saucepan for several minutes over a medium heat, until they mash down.
