Filipino Ribs

Cut pork spareribs into 2- or 3-rib chunks, put into a large pan together with an onion cut into wedges, 3 Tbs soy sauce,
freshly-ground black pepper and 3 star anise. Add a cup of water, bring to a boil, cover and simmer gently for about 1½ hours,
until the ribs are very tender. Meanwhile, make a basting sauce: fry a finely chopped small onion until softened, then add
a Tbs grated ginger, 2 Tbs honey, a Tbs Worcestershire sauce, a Tbs lemon juice and 2 Tbs soy sauce. Simmer for 3 – 4 minutes,
until nicely blended. When the ribs are done, remove with tongs and place in a single layer on a greased baking tray. Brush with
the basting sauce and bake in a 200°C oven for about 25-30 minutes, basting often with the drippings and remaining sauce,
until well glazed. Serve with a warm potato salad: cook new potatoes, then dress with a vinaigrette and chopped spring onions.
Accompany with orange and avocado salad.
