Mix together 1 Tbs runny honey, 2 Tbs light soy sauce, 2 Tbs lemon juice, a pinch each of ground cinnamon and ground nutmeg
and put this into a shallow dish. Add pork steaks, turning them to baste well, and leave to marinate in the refrigerator for
a couple of hours. When ready to cook, drain the pork steaks, reserving the marinade, season with freshly-ground black pepper
and fry in a little olive oil for 5-6 minutes each side, depending on their thickness. When nice and golden, remove and keep warm,
then pour in the reserved marinade, bring to a simmer to reduce slightly, stir in a Tbs grain mustard and serve over the steaks,
with buttered potatoes and green beans.
