This olive press that we saw in Haddej looks like a relic from another time, but olive oil is still made this way in many small remote villages. Old olive press like this one were very basic, requiring only the simplest of materials and do not require any electricity. Olives are spread out on the round slab, and are then crushed by a stone roller that is attached to a palm trunk and pulled by a donkey or camel. This olive press looks like it has served many families for many years, and deserves a well-earned retirement.
