Pit dwellings were not only built as homes, but they housed olive press too. Olives were introduced to North Africa by the Romans, and have since been an important part of the Tunisian diet and agricultural industry. Where modern townsfolk would get their olive oil from shops, smaller and remote villages would normally make their own.
