After the seeds have sprouted, they need to be dried before fermenting. In Africa, this can be done in the sun, but here in Alaska, where we had only two days with temperatures higher than 70 F this past summer, the oven, set at 175 F works after a few hours. You want to dry the millet, not cook it, so keep the temperature relatively low.
