Katube

Katube is a Bemba (Zambia) finger millet beer that leaves the grains in the beer when you are drinking it. It is brewed in a gourd and when it is ready to drink, boiling water is added. This causes some of the millet to float and some to sink leaving a seed-free millet layer. The trick is to find that layer using a straw. You blow out gently while inserting the straw so that it does not fill up with grain (seeds) until you think you are in the liquid-only layer. Then you suck in the katube. This is done in a communal setting. First the chief drinks, then the headman or headwoman, then everyone else in turn. When the liquid-only layer is exhausted, pour in some more boiling water and start again. Repeat until there is nothing left worth having.
