Opposite Parliament House in Spring Street is a hole in the wall grocery shop that does nicely enough to stay afloat, but which many people would walk past without even noticing. But wander in and down the stairs, and you will behold a site to fill the heart of any dedicated cheese-o-phile.
A maturing cellar, a friendly expert cheesemaker from France, and a range of cheeses from Australia and around the world which is, quite frankly, jaw dropping.
You can of course book in for cheese and wine tastings, which we were unaware of before this trip. The next one was on the afternoon that we flew out.
This spot can only be visited when the tour group is small; in this case it was just two of us plus the guide, so we had no problem.
