Traditional Gado Gado

Jakarta, Indonesia

Gado gado or spelled gado2 is a salad, well, it is actually a dish of cocked vegetables mixed with peanut butter sauce. In the old days, this is the only way of making gado2. You ground peanut in a rock shallow bowl, you add salt, pepper, shrimp paste, etc to your liking, and of course water to creae a fairly thick sauce. You add the cocked veggies into the sauce and mix it. So, you basically make one portion at a time and you can vary the taste according to your liking. This guy is still making gado2 using the old style.

Nowadays, you can make the peanut butter sauce in a huge container and you add the sauce to a portion of veggies and done! Call me old fashioned but if I eat gado2 in Indonesia, I still prefer the old fashion way of making it.
