The last few leaves of the crab apple trees

Purple crab apple - malus x purpurea

These leaves are on a new crab apple we bought a couple of years ago. I've been very keen to see if they'll give us autumn colour - this is about as good as they'll ever be, nothing special this year. The crab apple flowers for this one are a deep cherry red and the fruit is cherry red as well (when it eventually starts producing them). The fruit is recommended for jams and jellies - anyone have a recipe?
