I love the textures in this shot! Yeah, you could've focused on the cabbage, but then you'd loose the detail of the wonderful kitchen worker. This picture is about texture to me.
If you want to express the chopping of red cabbage, stress the cabbage by shifting your plane of focus to the cabbage. In this case, the focal emphasis is on the arm and shirt of the chopper, not on the cabbage.
