Undiscovered, same as you almost, I have a Canon EOS 20D (not the slightly cooler 30D like you), and the Canon EF-S 17-85mm f4-5.6 IS USM, and the Canon Speedlite 580EX (like you).
To Soften shaddows from this powerfull flash I use a LumiQuest Ultrasoft bounce+difuser.
I also have a Canon 50mm f1.8 lens, makes for nice soft background blurr, and is great for low light... but Its AutoFocus isnt the best/fastes/most precice.
