I love quinoa as it can be the starter for so many meals.
For this salad I added cannellini beans, asparagus, red peppers, cucumbers, tomatoes, purple onions, and cilantro.
It was drizzled with seasoned rice vinegar and olive oil and served on Romaine lettuce.
Lunch is served!
The light was quite awful coming in the window, so I used a combination of window light and lightpainting for this photo.
