This is a series of pictures showing the construction of a pizza at home using a Fibrement pizza stone and a home oven. The dough was made 5 days earlier at home and frozen. It is a 60% retarded dough using Gold Medal All Trumps flour.
Defrost dough in refrigerator and then bring to room temperature at least an hour before forming the pizza.
Grande Mozzarella, sweet sausage, fresh basil, and sliced onions.
Room temperature dough ball sprinkled with flour.
Sauce, extra virgin olive oil, spices, flour.
Crust hand formed on parchment paper for transfer to pizza peel.
Preheat oven to 500 degrees F for at least one hour before forming the pizza. Drop the temperature to 450 degrees and transfer t
Brush the hot crust with olive oil, add sauce, and spices.
Apply the Grande Mozzarella.
Lots of sausage!
Some onions.
Place back into the 450 degree oven until done, turning as needed.
Done! Let cool for a few minutes and dig in. Sprinkle with extra virgin olive oil as desired.
