They say to "discard" the fat that's strained from the drippings. Don't!!!
Rendered duck fat is one of those great things to have around for sauteeing vegetables, to add richness.
We use it as a fat source for making gumbo, sauteeing the vegetables, gives a much better flavor than oil or other animal fat.
Store in closed container in refrigerator.
