Just before they harvest the sugar cane, they burn it off to get rid of snakes and vermin. It doesn't harm the sugar cane but makes it easier and safer for the harvesters. This is becoming less common for environmental reasons. Also, the stuff they used to burn is being used to make building material (MDF) and garden mulch.
