This is a great shot! First I noticed the clean apron, we want clean, clean is good. The look on his face tells us he’s proud of his work. Then I noticed his hands...
I have a friend who is a retired butcher, who happens to be Italian and he stands just like this. He holds his hands the same way. I always figured he was subconsciously counting his fingers. You’ll be taking to him and he does what this guy is doing, He works down one hand touching each of his fingers then works his was back up on the other one. I don’t even think he knows he doing it. I have done a little meat cutting, a few bad cuts and you become very aware of your hands and fingers.
