All red corals in the Northwest make excellent edibles. None are poisonous, but remember any mushroom may cause indigestion in some people, even store-bought ones. These are easy to spot in the dark Northwest conifer forests in the fall, and always a treat to find. They require more cleaning than other mushrooms, as small insects or even small slugs can hide inside them. Break off chunks, soak in salt water for a few minutes to drive out the critters. Ramarias are a mushroom that can be roasted in a preheated oven, checking every few minutes to make sure they do not get burned, but they are done soon. However, they are also excellent sauteed in butter. They retain their color with cooking and so can dress up a salad or be plucked colorfully from the liquid if pickled. Like any other mushroom they can be frozen and kept for later use if cooked first.
