Making of Maple Syrup in WI

Traditionally, maple syrup is harvested by tapping maple trees in March & April letting the sap run into a bucket. During processing, the sap is boiled down in a flat pan until it forms a sweet syrup. The process is slow, because most of the water has to boil out of the sap before it is the right density. It takes approximately 40 litres of sap to make 1 litre of maple syrup.
