Ginny and I have one substantial meal per day, usually at noon. Pork loin ribs were on sale at Kroger, so we snapped up a couple slabs. Once upon a time they would be cooked on our Weber grill. No longer. For quite a while they have been cooked in the oven. When on the grill, it is hard to keep a consistent temperature for the 4 hours or so it takes to cook. It is important to closely monitor the cooker. The oven is a snap. They get a good coating of oil and rub then into the oven at 250F for four hours. Just walk away and forget about it until the buzzer sounds, then up to 300F for 30 minutes. Voila, perfect ribs every time. I love it. Ginny loves the ribs. A little home made cole slaw and some baked beans and you have a feast. Oh yeah, beer pairs well with ribs, especially Sierra Nevada Pale Ale. There are going to be great left overs for several days. Life is good.
