We had a great time today. Ginny's cousins Mike and Theresa came down from Kingwood for a nice lunch. My job was cooking the pork ribs and making the corn muffins. Ginny made baked beans, a bacon dome and cole slaw. We had some appetizers (crackers and such), some wine and some beer. It was a feast of epic proportions.
I really like to cook pork ribs. Over the years I have become pretty good at it. Most of the time I cook them in the oven because using my outdoor cooker can be a pain and hard to control. I make my own rub each time. It is mostly black pepper with other stuff. I don't use too much salt in it. So I rub with oil and sprinkle the rub on the ribs. I cook them for three hours at 250F then run the temperature up to 300F for an hour or more, depending on the doneness. Today's ribs were very good of course. I square them up by cutting off the ends. That makes nice cut ribs. The stuff I cut off goes into the oven and gets cooked just like the other. Today's photo is of one of the racks of ribs ready for the oven. That is a lot of ribs, but they make great left-overs. Life is good.
