We have several stainless steel skillets which we seldom use. One of the reasons is that they get gummed up and are hard to clean. When they get hot and you have a low smoke point oil, that is a recipe for baked on gradue. I got to learning about SS pans and found that they work best when they are heated quite high. That means, of course, you need a high smoke point oil. Ghee is one of those oils. Smoke point of 465F. It sounds exotic and it is quite expensive at Kroger. So I decided to have a go at making some of my own. The procedure is heat it over the boiling point of water and let the water bubble out. You are left with an oil and a bunch of solids which precipitate out. Separate the oil from the solids and VOILA, you have ghee. It worked pretty good. I think I got it a little too hot, but the ghee smells very buttery which is a good sign. Now I have to try it out. Stay tuned.
