What do you do with left over turkey. You start converting it to stew and gumbo. The first step in the process is to boil the carcass to make stock and tenderize the carcass so the meat can be removed easily. So it boiled all afternoon and evening in our biggest pot and was left on the stove to cool over night. This morning I got busy and separated the meat from the rest of it and packaged it all up for the refrigerator. In all I got 2 gallons of turkey broth (very tasty!) and 3 pounds, four ounces of meat. Let the soup making begin! Well, maybe is a few days.
