Today is the first Friday in Lent. For us mackerel smackers, that means no meat. We figured we should start out the season with one of our favorites, oven fried catfish. So we went to Kroger yesterday (the day after the blackout) and found they has no fish and very little meat. The store was pretty well depleted just like when the covid hoarding rush occurred. There was some frozen breaded fish so we got a package of that. We also got some more asparagus, Ginny loves asparagus. I was the designated chef today, and I decided that fried fish and asparagus was just not going to cut it. I wanted fries or hush puppies, but settled for some hot corn bread. It was good.
