During all this pandemic isolation stuff we have drifted to making lunch our big meal of the day. About three times per week we cook something really good and then enjoy the leftovers for a day or so. One of our favorite meals is beef fajitas. If you are a Yankee and have always wondered what that skirt steak you see at the meat market is used for, it is for fajitas.
Along with the fajitas there are tortillas, refried beans, roasted peppers and onions, picante sauce, shredded cheese and sour cream. And today, some leftover Mexican rice. It is quite evident from the photo that Ginny is enjoying it.
