Our new ovens seem to be quite nice. They are in regular use around here. It seemed the right time to start doing some analysis of their performance. The old ovens were well understood and calibrated. If memory serves me they were pretty much spot on temperature wise and didn't seem to wander much from the setpoint.
Today, bacon was going to be cooked. The preferred oven temperature is 400. With that setpoint I put a thermometer on the top rack and watched what happened. Upon preheating, the temperature rose to 420. After a while it found its way back down to 375. The changes in temperature were gradual. The 420-375 drop took about 30 minutes. The controller was set at 400 during this time.
One could argue that the thermometer was off. That is true, but the fact that the temperature wandered 45 degrees is indisputable. I don't like that. I also don't like that the response time is very long. There are lots of bells and whistles on the oven controller. It can also act as a convection oven. I have used that setting before, but not in any controlled manner. There is lots of experimentation to be done. This will be fun. Life is good and there is lots of stuff to be explored, especially if you are easily amused.
