You know that your brisket is done when you run out of room to put empty beer bottles on the side of the grill. This is a brisket that I smoked and cooked for 18 hours. I did it low and slow and the thing came out unbelievably good. Very juicy and tender. I would do this again in a heartbeat. Pat came over to help us out at dinner. We had a good time.

It is a tough job but somebody has to do it. I figure I am getting pretty good at it because Ginny is no longer backseat driving on my grill work.
