Today I conducted round 2 of my training on the new barbeque. Today it was fajitas. Rather than skirt steak, I got a flank steak for the fajitas. It was terrific. Much more tender than a skirt steak. I grilled some peppers and onions and we had a feast. One thing that I am beginning to realize is that marinades, rubs and post treatments can really add a potload of flavor. This is fun. Life is good.
Add a cold beer and you've got yourself a real bbq treat, one of my favorites. You're right, skirt steak does suck, way too tough!
