Had a random urge to research aging beef and to see if it was possible and reasonably safe to try at home. Found a product called Drybag Steak by Umai ( http://http://www.drybagsteak.com/) that got good reviews and struck me as much more sanitary and much less work than wrapping a hunk of cow with cotton cloth and throwing it in the fridge. Time will tell..........
