| Serves 4; Prep Time: 10 Minutes; Total Time: 50 Minutes Instructions 1 Preheat oven to 450 F. Place 2 thinly sliced onions and 1 cut-up chicken (3 1/2 lbs in 8 pieces) in a 9-by-13-inch baking dish or roasting pan. Drizzle with 2 tablespoons vegetable oil; season with 2 tablespoons coarse salt and 1/2 teaspoon ground pepper. Toss to coat. |
