Mmmmmmmm! Yum! We get just one variety here in our stores but always with the Product of Canada on it, not US, although I remember well the beautiful sugar maoles there. I appreciate Raymond's comment. Great image. V
Pure gold, the light color one says it is the first syrup of the season, it gets darker as the season progress (lasts about 3 weeks), the darker tones are the last gathered and have a more concentrated flavour. What people buy in grocery stores are usually a 'middle' tone, mixing them all together! If you have the chance, get the darker syrup. BTW, that season should start in the next couple weeks, for it to work, the temperature outside has to be BELOW zero at night and ABOVE zero during the day, without that factor, you get zero maple sugar!
