It may not be beautiful but it is delicious!
I've been making this banana walnut cake since I got my Cuisinart DLC 7 food processor in the 70's.
I'm always happy when I have overripe bananas - it takes about 3 medium size to come up with the 1 1/4 cups of mashed banana for the recipe.
These days I use two packets of True Lemon instead of the lemon juice and lemon zest, since I rarely have a lemon in the house, but always have the True Lemon Packets.
The cake isn't very high, so if you're going to try it in a bundt pan don't be surprised.
I wrap individual slices and freeze them, sometimes just defrosting them and other times, air frying them till they get a bit crisp.
