I think I can safely say that no one in Hendersonville, maybe the whole state, had a Korean Seafood Pancake for breakfast this morning.
These were so perfectly crisp and not gummy as some of my previous attempts at cooking dishes like this, that I have finally realized my Asian pancakes have been so gummy is the fact that I haven't made the batter thin enough.
Their delicious crunchiness was worth every greasy splatter I had to clean off my cooktop.
The dipping mix was delicious, too. First time I ever used apple cider vinegar for one. I only use 1/8 teaspoon of the gochugaru (Korean ground red pepper that's ubiquitous in Korean recipes).
