I finally solved the problem of the mountainous looking bialies! I had to make the depression for the filling much larger - perhaps two inches. As the dough rose in the oven the sides moved in but they also DID NOT rise! I probably forgot to sprinkle the tops of the bottom ones with flour. They're looking a bit anemic. They both baked for 12 minutes. I think the top ones are GORGEOUS - I've tried enough different recipes for these which we love so much for breakfast.
