The high point of my husband's hikes with "Hell's Geezers", is the desserts they share at lunchtime. Neighbor Tom brought these brownies, which he said were "healthy" because they have additional fiber and no oil. The egg, he said, is optional:
1 15 oz. can black beans
1 bag Ghirardelli Brownie Mix (I bought a six-pack of their Triple Chocolate Brownie Mix at Costco).
1/4 cup water
1/3 cup unsweetened applesauce - I was horrified to discover that my applesauce was moldy, so I substituted a medium sized Golden Delicious apple cut in chunks and added it to the beans, pulverizing them together)
1 egg
Use a blender to grind up the black beans with all the liquid from the can. I suspect you can also use a food processor to do this.
Combine all ingredients, including the beans, and pour into greased baking dish and bake at 325 degrees. (8x8 metal pan - 40 mins; glass - 45 minutes, 9x9 metal pan 41 mins)
I found using a toothpick to check doneness that the inside was a bit wet at 45 minutes for my glass pan, so I cooked it an additional 7 minutes.
Resulting brownie, as you can see from the picture, is very dense and fudgey.
