A step in preparing the sushi rice (shari) is cooling by hand fanning to proper temperature after adding the vinegar mix at 90 degree C. Ready for sushi at 30 degree C. The vinegar mix consists of vinegar, sugar, salt, kombu, or sake/mirin.
