Good Friday's lunch

Had some friends over for Good Friday lunch and gave them "Thai Style Whole Fish" for lunch.

Must say I was impressed with the way the fish turned out. It was scrumptious.
Receipe was:

1kg Fish (I chose Snapper)
2 cloves of garlic, crushed
1 tbsp fish sauce
2 tbsp lemon juice
1 tbsp fresh giner
2 tbsp chopped fresh coriander
1 tbsp rice vinger
2 spring onions, cut into strips

Preheat oven to 190 degrees. Place all ingredients, except for the fish, in a jug and mix well. Place the fish on a large piece of well greased foil in a baking dish. Pour the marinade over the fresh and sprinkle with the extra spring onions. Wrap fish into a parcel and bake for 20-30 minutes.
Place on serving tray when cooked, decorate with lemons and extra coriander.
